Shortbread Cookies

Ingredients
Directions
1/2 cup Canada Corn Starch1/2 cup Icing Sugar1 cup All-purpose flour, sifted3/4 cup butter, room temperature
1. Sift together corn starch, icing sugar, and all-purpose flour into bowl.
2. Blend batter into dry ingredients with a spoon (or clean hands) until dough is formed.
3. Shape into balls about 1-inch in diameter.
4. Place on ungreased cookie sheet about 1.5 inches apart.
5. Flatten dough with lightly floured fork.
6. Decorate (see tips below)
7. Bake at 300F, 20 to 25 minutes until edges of cookies are lightly browned.
Makes 3 to 4 dozen cookies.
NOTE: If dough is very soft, cover and chill 20 to 30 minutes. (I find this is necessary to avoid cookies melting in the oven. I usually roll dough into cookies, put them on the cookie sheet, decorate, then chill 20 minutes before putting in the oven.)
DECORATION TIPS
* Place 0.25 to 0.5 piece of green or red candy cherry, walnut piece or candy sprinkles on cookie dough.
*You can gently roll dough to cut with cookie cutters but do not over-handle dough, it will become dry and crumbly.
