Artichoke Shrimp Penne

Artichoke Hearts, 8.5 oz Mushrooms, canned, .25 cup *Dreamfields low carb penne rigate, 3 cup Feta Cheese, 2 oz Onions, raw, .5 cup, chopped Shrimp, cooked, 20 large Parmesan Cheese, grated, .5 tbsp Black Olives, canned (small-extra large), 1 tbsp Pepper, red or cayenne, .5 tbsp Garlic, 3 cloves, minced
Add Penne (1 3/4 C dry) to salted,boiling water, cook to Al Dente. While pasta is cooking, drain & rinse artichoke heart, cut in quarters. In large non stick pan over medium heat, add mushrooms with liquid, artichokes and onion, cook 5 minutes,stirring occasionally. Add 1/4 pasta water , crushed red pepper, garlic and shrimp. Drain pasta and add to pan, cooking another 3 - 4 minutes. Stir in feta and parmesan cheeses. Garnish with black olives. Garlic and red pepper may be adjusted to taste. Enjoy!
