Healthy Banana Blueberry Pancakes

3 very ripe bananas1 1/4 c. skim milk1 egg1 tsp. vanilla1 c. whole wheat flour 1/4-1/2 c. uncooked oatmeal 2 tbsp. sugar 2 tsp. baking powder 1/4 tsp. salt 1-1/4 c. frozen blueberries (do NOT thaw)
Preheat griddle or large, non-stick frying pan, that has been sprayed with Pam. In a large bowl, mash bananas until mushy. Add milk, eggs and vanilla and mix until blended. Add dry ingredients and mix until just blended- tiny lumps should still appear. Do not overmix or pancakes will be tough. Stir in frozen blueberries. Use a 1/3 cup measuring cup to scoop out batter. When bubbles begin to break open on top of pancake, turn over and cook until golden on second side. Transfer to a warm plate and keep pancakes in a 250 degree oven while the rest of the pancakes are cooked. Makes 14 pancakes. Serve with maple syrup.
