3/4 cup flour1 1/2 tsp salt1/2 tsp cinnamon, ground1/2 tsp nutmeg, ground1/4 tsp mace, ground1/3 tsp cloves, ground1/2 pound raisins (2/3 cup)1/2 pound currants (2/3 cup)1/4 pound chopped dates (1/3 cup)4 oz. mixed fruit chopped (1/3 cup)1/2 cup fine bread crumbs1 cup scalded milk1/4 cup sugar4 eggs separated2 cups chopped suet1/2 cup boiled water
Mix flour, salt & spices & mix through fruits. Soak bread crumbs in scalded milk for 10 minutes. Beat egg yolks & beat in sugar, then add suet & soaked bread crumbs. Stir into fruit mixture, blend well. beat egg whites and fold into mixture. Turn into a greased 1 1/2 quart mold, cover & steam for 3 1/2 hours.
