Low fat sweet potatoe pie

crust1.5 cups of crushed graham crackers 6 tbsp of light butter1 tbsp of ground cinnamonfilling1/2 c egg substitute2 c cooked sweet potatoes, mashed1c Splenda1 can fat free evaporated milk (12oz)1 tsp lemon juice1 tbsp flour1 tsp vanilla extract1/2 tsp ground nutmeg1/2 tsp ground cinnamon1/2 tsp salt
mix crushed graham crackers with ground cinnamon blend in light butter 1 tbsp at a time. Press into a 9in. pie plate, set aside or chill until filling is ready.
Beat sweet potatoes until smooth.
Add egg substitute, evaporated milk and vanilla, beat for another 25 or 30 seconds.
Add Splenda, lemon juice, flour, nutmeg, salt and cinnamon. Beat until thoroughly mixed.
Pour mixture into graham cracker crust, place on center rack in oven.
Bake approximately 40 - 45 minutes or until inserted toothpick comes out clean.
Cool on wire rack 10 -15 minutes
Refrigerate until ready to serve
