Quiche Florentine

Ingredients
3 tbsp minced inion1/4 cup butter3 tbsp flour1/2 tsp salt1/8 tsp pepper1 cup milk5 beaten eggs10 oz cooked spinach (fresh or frozen - drain well)1/2 cup finely diced ham1/2 cup shredded swiss cheese
Directions
Saute onion in butter until tender. Blend in flour, salt and pepper. Add milk; cook until smooth and thickened. Gradually add small amount of hot mixture to eggs. Return to saucepan and cook 1 minute. Remove from heat and stir in other ingredients, except for 1/4 cup cheese. Pour into pie pan and top with remaining cheese. Bake at 375 degrees for about 2o minutes until the knife comes out clean.
