Chocolate Mint Cookies from Mary Murphy 2006

Butter, unsalted, .75 cup Brown Sugar, 1.5 cup, packed *Nestle Semi-Sweet Chocolate (chip) Morsels - 12 oz *2 Large Eggs*Flour, white, 2.5 cup Baking Soda, 1.25 tspAndes Mint (1 piece) Andes Creme de Menthe Thins, 40 serving
heat butter sugar and water (2T) over low heat. Add choc chips - stir until partially melted. Remove from heat and continue stirring until all chocolate is melted. Pour mixture in lg mixing bowl - let stand 10 min. to cool slightly.
Add eggs 1 at a time. Add dry ingredients until just blended. Cover and refrig at least 1 hour.
Preheat oven 350 degrees. Roll into 1" balls (this is messy - I use Pampered chef small scoop) and place on ungreased cookie sheet (I use parchment paper) 2" apart. 12-13 minutes.
Remove from oven and immediately place 1/2 mint on each hot cookie. Let soften, then smooth with a spoon. Cool on wire rack and store in air-tight container. Yield approx. 80 cookies.
