4-medium baby Zucchini, 5 Stalks Celery, 28oz can Dei Fratelli Seasoned Tomatoes, 10 oz can Rotel diced tomatoes,1tsp garlic, 1tsp dry Italian seasoning, tsp dry basil, 1.5tbl olive oil, .75 cup Parmesan Cheese
In large sauce pan add oil, celery, onion, garlic, dry seasonings and saute until soft, add tomatoes and bring to a simmer for ten minutes. Slice zucchini into 1/8" thick slices and layer in the bottom of a 3 quart baking dish, pour saute ingredients over zucchini and top with grated Parmesan. Bake for 35-40 minutes until Parmesan topping is crisp golden brown.
