Chicken and Vegetable Rotini Casserole

chicken breasts, 0.5 breast boneless and no skinWhole Wheat Rotini, 3/4 cupPace Mexican 4 cheese queso, 1/4 cupProgresso bread crumbs, 1/4 cupFrozen Broccoli and Cauliflower, 3/4 cupLight Olive oil, 1 tbspPepper, to tasteGarlic Powder, to taste
In a large pot, place frozen chicken breast in 4 qts of water, bring to a boil. Continue to boil until chicken turns white and floating. Remove chicken and drop the broccoli and cauliflower into the water to blanch. Remove vegetables and add rotini to water, prepare according to instructions on box. Combine all ingredients in a lightly greased (olive oil) casserole dish and blend with queso and bread crumbs. Cook in preheated 350 degree oven for 15-20 minutes.
