Sweet Corn Pudding

Ingredients
1 package (12oz) Birds Eye Steamfresh Super Sweet Corn1 cup fat free milk2 eggs, lightly beaten3 Tbsp Mircle Whip Light Dressing3 Tbsp. unsalted butter2 Tbsp Splenda 1 Tbsp. Whole Wheat FlourPinch of Salt
Directions
Preheat oven to 350 degrees. Prepare Birds Eye Super Sweet Corn according to package directions, then set aside to cool.

Combine remaining ingredients in large bowl with wire whisk; stir in corn. Turn into greased 1-quart shallow casserole.

Bake 1 hour or until golden.

    Excellent! You can also try with some variations (of course not as healthy) - use heavy cream instead of fat free milk, add shredded cheddar cheese and crushed Ritz crackers on top. Yum! - 1/8/11
