Easy Chicken Moo Shoo

Ingredients

Olive Oil, 1 tbspSesame Oil, 1 tbspOnions, raw, 1 medium sliced thinMushrooms (any kind-I like wood ear and shitaake), fresh, 2 cup, slicedGarlic, 3 cloves 16oz bag of cole slaw or 3 cups shredded cabbageSoy sauce low sodium, .25 cup Beef broth .5 cup Corn Starch, 1 tbspScallions, raw, .5 cup, chopped Duck Sauce, 2 tbsp Chicken Breast, no skin, 16 ounces sliced into thin strips
Heat olive and sesame oil in a nonstick skillet
Add onion, garlic and mushrooms and sauteed until golden brown
Add cabbage mix
In a separate bowl wisk together soy sauce, beef broth and corn starch until smooth and set aside
Add chicken to onion mushroom mixture and cook for 2 minutes.
Add soy sauce mixture to pan and stir in duck sauce.
Sautee until sauce just starts to thicken and chicken is cooked through.
Sprinkle scallions over mixture just before serving.
Serve in soft taco shells or high fiber tortillas with sweet and spicy hot sauce.
