Pineapple Raisin Cupcakes

Ingredients
1/2 cup raisins3/4 cup crushed pineapple, drained but not dry1 cup brown sugar1/2 cup margarine1 egg, unbeaten1 tsp vanilla2 cups all purpose flour1 tsp baksing powder1/2 tsp baking soda1/2 tsp salt1/2 cup chopped walnuts
Directions
Drain excess juice off pineapple. Mix raisins and pineapple; set aside. Combine sugar, butter, egg and vanilla in a mixing bowl; beat until fluffy. Stir in raisins and pineapple. Sift flour with baking powder, baking soda and salt. Add to wet ingredients and mix well. Sitr in nuts. Spoon into greased or paper lined muffing tin, filling 1/2 to 2/3 full. Bake at 375 degrees for 20 minutes or until done.

Muffins are better the second day after making. The flavors come together much better.

    Im not convinced on these I will wait and have a taste tomorrow as you suggested but my husband seems to like them. I will probably make them again.
