Clean Chicken Tortilla Soup

Ingredients
2 cups diced or shredded chicken breast1 medium onion2 cloves of garlic1 tbsp EVOO2 14 oz cans petite diced tomatoes1 4 oz can diced green chilies6 cups chicken broth1 tbsp cumin1 tbsp oregano1 tbsp cilantro
Directions
Saute onion and garlic in EVOO in a large stock pot. Meanwhile, if chicken is not already shredded or diced, do that.

Add chicken, tomatoes, chilies and broth to pot. Stir.
Stir in seasonings. Bring to boil, then cover and reduce to a simmer for about 15-30 minutes.

Makes six 1 1/2 cup servings.

    This is going to get printed and put into my cookbook. I made this tortilla soup recipe since it's been so wintery out and my son came down with a cold. He's a really picky eater and he loved it. There was a lot of cumin in this recipe, and although it smells like too much, it tastes great. - 12/20/11
