Chicken and brown rice pilaf

Ingredients
1 t. canola oil4 skinless, boneless chicken breasts1 10 1/2 can fat free chicken broth 1/2 c. water2 c. whole grain brown minute rice1 small onion, chopped and lightly browned2 c. peas and carrots, frozen
Directions
Place cubed chicken in hot oil and cook on medium until just cooked through. Add chopped onion. If pan is too dry a bit of chicken broth can be used. Add chicken broth and water. Heat to boiling. Add vegetables. Cook with the lid on, medium low for 5-7 minutes. Let sit for 5-7 additional minutes before serving. A very filling dish.
