Mock Chicken Fideo

Ingredients
1/2 Tbsp canola oil1 medium onion, diced4 cloves garlic, minced1 (10 ounce) can Vegetarian mock chicken, drained, sliced1 cup diced tomatoes (canned, no salt)1/4 tsp black pepper2 tsp ground cumin2 pinches cayenne, or more to taste4 cups water1 tsp Better Than Bouillon No Chicken soup base1 (7 ounce) pkg Fideo pasta1 cup frozen corn
Directions
In nonstick Dutch oven, saute onion in oil over medium heat 2 to 3 minutes 'til onion is tender and begins to brown. Add mock chicken, garlic, and black pepper. Saute 'til gluten begins to brown. Add cumin and cayenne; stir and cook 1 minute to toast spices. Add tomato; stir and cook 3 or 4 minutes. Add water and bouillon. Bring to boil. Add zucchini and fideo. Cook 5 minutes. Stir in corn and simmer 3 minutes more. Pasta will absorb the liquid. Adjust seasonings and serve.
