milk-free pancakes

Ingredients
dry:1c. flour1/2 t. salt1 1/2 t. baking powder2 T. powdered sugarwet:3 eggs1 c. coconut milk1/2 c. water1/2 t. vanilla
Directions
combine dry ingredients and mix well
separately, combine wet ingredients and mix well

pour wet ingredients into dry all at once and mix until all is wet.

cook 1/2 c. in an oiled skillet
flip when bubbles in the center pop and stay open

makes 8 large pancakes
