Bacon and Cheese Grits Casserole

Ingredients
8 Cups of Water2 tsp. salt2 cups of uncooked grits3 cups of shredded sharp cheddar cheese1 cup of butter or margarine2 cups fat free milk8 eggs, beaten1/4 tsp. ground red pepper (cayenne)8 pieces of bacon crumbled (I use pre-cooked)
Directions
Heat oven to 350 degrees (F).
Grease 9x13 baking dish.
In large saucepan, combine water and salt. Bring to a boil. Gradually stir in grits. Reduce heat to low; cover and cook 5 minutes, stirring occasionally.
Remove from heat. Add 1 1/2 cups of the cheese and the butter; stir until melted. Add milk, eggs, bacon, and pepper; mix well. Pour mixture into greased baking dish. Sprinkle with remaining cheese.
Bake at 350 degrees(F) for 1 hour or until golden brown.
Let stand 10 minutes before serving.
Makes 16 servings.
