Pao De Quejos (cheese bread from brazil)

Ingredients
Directions
1/2 cup half and half1/2 cup water 1 stick Butter1 1/2 cups Parmesan2 cups tapioca starch / flour2 large eggs, lightly beaten
1. (Turn oven to 400) Bring milk and butter to a full boil then remove from heat
2. Stir in cheese
3.Gradually add tapioca flour
4. stir in eggs, mixing well
5.spoon into mini muffin tins, (not heaping)
6. bake at 400 for 12 minutes, or until lightly browned
variations

sprinkle with herbs and cheese
add bits of cooked bacon or prosciutto
use cream cheese instead of parm,add sugar and some cinnamon
