Kari's Canary Bean and Cabbage Soup

1 medium onion, diced3 cloves garlic, minced1 large carrot, diced1 rib celery with leaves, diced2 cups thinly sliced cabbage (1/4 small)1 cup canned diced tomato (no salt)5 cups water2 vegetable bouillon cubes (no salt)1 tsp kosher salt1 (15.5 ounce) can Goya Canary Beans, rinsed and drained1 (15.5 ounce) can white hominy, rinsed and drained3/4 tsp freshly ground black pepper1 cup peeled diced potato 2 Tbsp minced cilantro
In Dutch oven or soup pot, saute onion with a little water until brown about 5 minutes. Add garlic, carrot, celery and saute 3 minutes. Add water, tomato, bouillon cubes and salt. Bring to boil. Add hominy, canary beans, potatoes, and pepper. Reduce heat to low and simmer 15 to 20 minutes. Stir in cilantro. Serve with crusty bread or toast, if desired.
