Turkey and Penne Casserole (Weight Watchers)

8oz whole wheat penne2t olive oil1 lb ground turkey breast1 large onion4 cloves garlic, minced28oz whole tomatoes, drained3/4 tsp salt1/2 tsp pepper2tps oregano1 c part skim ricotta1 c part skim mozzarella
preheat oven to 350; spray 13x9 pan.
cook penne according to pkg, drain, transfer to large bowl
heat oil over medium high heat. add turkey and brown, 8 min. add onion and garlic, cook until soft, 3 min. stir in tomatoes, salt, pepper; cook until sauce thickens, about 15 min. stir in oregano.
add turkey to penne; mix well. stir in ricotta and 1/2 c mozz. transfer to baking dish. top with remaining 1/2 c mozz. bake until heated thru and lightly browned, about 25 min.
serves 8.
