easy crockpot sambar

Ingredients
1 head broccolli cut into floretsone half cabbage,sliced2 carrots, sliced2 potatoes, cut into small chunks1 can diced tomatoes (undrained)1 cup dal (rinsed)1/2 cup frozen green peas1.5 TSP each of onion powder and garlic powder1 tsp turmeric1/2 tsp fenugreek1/4 to 1/2 tsp tamarinda few mustard seeds (1/4 tsp)2 garlic cloves, chopped,and 1 onion, chopped2 dried red chiliesa few curry leaves1/4 tsp coriander1 tbsp of ghee or evoo for sauteing onions/garlic
Directions
Heat some ghee or olive oil in a pan on medium heat, and saute the garlic and onions. Add the other spices (turmeric, coriander, sambar powder (substituted in this recipe with garlic and onion powder), mustard seeds, and curry leaves, and saute until spices become aromatic.

scrape sauteed mixture into a crock pot, and add remaining ingredients. Cook in crockpot on low for several hours.

    There was no liquid in this recipe so I added 3-4 cups of water but it did not turn out correctly. - 8/14/14
