Ingredients

    1 medium (150g) onion
    2 cloves garlic
    4cm piece of ginger, peeled
    2 tablespoons coriander leaves
    1 tablespoon peanut oil
    1/4 cup (60ml) mild curry paste
    2 medium (400g) potatoes, roughly chopped
    1 medium (120g) carrot, chopped
    1.5 litres (6 cups) chicken stock
    1 cup (200g) red lentils
    1/2 cup (55g) coconut milk powder mix
    3/4 (180ml) water
    1 tablespoon lime juice

Directions

1. Chop onion, garlic and coriander (mix)
2. Heat oil in large pan; cook onion mixture until onion is soft. Add paste, cook, stirring until fragrant. Add potatoes, stock and lentils. Simmer, covered, for about 15 mins or until lentils are soft.
3. Blend soup mixture with hand held barmix (or something of the like)
4. Whisk coconut powder and water until smooth. Add coconut milk and lime juice to soup; stir over a low heat until heated through. Garnish soup with coriander; serve with naan bread.

    Good
    I didn't have the coconut mild powder so I didn't add it but it still tasted great! This recipe gave an excellent start to a great soup. - 4/8/10
