Ingredients
Olive Oil, 2 tspOnions, raw, 1 medium, chopped Garlic, .125 cup Celery, raw, 2 stalk, choppedCarrots, raw, 1 cup, chopped Water, 2 cups (or broth)Sherry, dry, 8 fl. oz Barilla Plus angel hair 8 oz Lemon juice, .25 cupBasil, 2 tbspRosemary, .5 tbsp Oregano, ground, 1 tbsp 2 cups Chick Peas 3 cups White beans
Directions
In a large pot, saute onion, celery, carrot, and garlic in olive oil until onions are translucent. Add water, sherry, herbs, and beans and bring to a boil. Reduce heat to simmer and cook for a few hours, stirring occasionally.

Strain about 2 cups beans and set aside. Puree the rest of the soup. Add reserved beans, lemon juice, and pasta and cook until pasta is al dente.

You can garnish with fresh parmesan if desired. It's excellent served with a nice crusty bread.
