raisin cinnamon oatmeal cookies

Ingredients
4 cups organic rolled oats2 cups organic golden 86 hard white wheat (ground makes 3-31/2 cups flour depending how packed), or use 3 cups organic flour3 organic eggs1 cup organic cold pressed coconut oil1.5 cups honey - raw or (honey that's just starting to turn sugary works best)1.5 teaspoons cinnamon2 cups raisins1 teaspoon almond extract
Directions
Beat together flavoring, eggs, honey and warmed coconut oil. (Coconut oil turns liquid at about 85 -90 degrees). In a large mixing bowl, mix together rolled oats, flour, cinnamon and raisins. When dry ingredients are well mixed, add wet ingredients all at once. Mix all ingredients together well. Use 1/8 cup measure to drop cookies unto ungreased stainless steel baking sheet. Bake at 350 degrees for 12 - 15 minutes. Makes 60 small or 30 large cookies. Use 1/4 cup measure to make large cookies.
