Rillettes de saumon

Ingredients
200g: Pink Salmon 200g: Lox130g: Saint-Moretone shallotsaltpepper
Directions
Cook the pink salmon water with salt and a teaspoon of fumet de poisson if available
Chop the shallot.
When it's cold, add the lox and the cheese, and the chopped shallot and mix to make it look like paté.
Chill.
