Ingredients

3 fl. oz of white wine (one you can cook with)
800g of cod, more or less (or other, you can even try with salmon)
3 shallots, chopped
2 garlic cloves, chopped
150 grams bread crumbs
juice of a large lemon
1 bunch fresh parsley, chopped
olive oil
salt and pepper
Tips
People usually put precooked scallop potatoes under the fish inside the dish, but you don't have to. I love mine with greens like green beans, it usually brings out all the flavor of the fish.
Directions
If your fish is frozen, put it in the fridge to defrost it.
Preheat the oven to 400°F or 180 °C.
Pour some olive oil (3 tbsp is enough) in a pan on the stove in high heat. Then, pour the chopped shallots and garlic, and allow it to golden for a couple min.
Pour white wine and put the heat on medium. Mix it wth the shallots and let it evaporate, entirely, and take it off the stove.
In a bowl, mix the shallots preparation with breadcrumbs, chopped parsley and lemon juice.
You can season it with a pinch of salt and pepper.
In a baking dish (take one that your fish will fit into, it needs to touch the sides), pour olive oil evenly in the bottom (not the whole thing, as long as there's a little everywhere) and place the fish, raw, fresh or defrost. Make sure you don't have any room, and if necessary cut the fish into pieces so that it really takes the whole dish.
Cover it with breadcrumb paste evenly.
Put it in the oven for 20 min and serve directly.
