Kate's Fritatta

Ingredients
2 c egg beaters 1 c egg white1/2 c plain silk soy milk3/4 c shreaded cheddar cheese1/2 c chopped green onions1/2 c roasted red peppers (jar) leave wholesalt pepper cajun seasoning
Directions
whisk first (5) ingredients - add seasonings. spray a springform pan with Pam. Line bottom of pan with red peppers (leave whole) being careful to place pepper around the edges to keep the egg mixture in the pan. (some leaking may occur) Pour mixture in pan, placing pan on a baking sheet (to catch leakage) - Bake at 400 degrees for an hour - check for doneness, it may need more time. The fritatta will rise a bit above the edge of the pan, but will deflate when it is removed from the pan. Let rest for a few minutes before running knife around edge to facilitate removal.
