Cheesy Broccoli-Cauliflower Soup

1 c Cauliflower, cooked and finely chopped1 c Broccoli, cooked and finely chopped0.5 c Onion, finely chopped1 c Cheddar Cheese, shredded1.5 c Skim Milk1 can Cream of Mushroom Soup (Low-fat, Low Sodium)1 can Cream of Chicken Soup (Low-fat)
Combine cheese, milk, and soup in crockpot, cook over high heat.
Meanwhile, cook broccoli and cauliflower, and chop finely, along with the onion.
Add broccoli, cauliflower, and onion to crock pot. Cook for at least 3 hours on high heat. Stir and serve.
Makes approx. 6 half-cup servings.
Variation: Add chicken for a more hearty soup, or use jack/pepperjack cheese for a little kick!
