6 cups prepared beef broth3 cups cabbage, chopped.5 onion, chopped2 cloves garlic, minced.5 cup carrots, chopped1 cup yellow squash, sliced1.5 cups zucchini, sliced.25 cups celery, choppedsalt & pepper to tasteother seasonings to taste
makes 8 1-cup servings.
Saute onion and garlic in cooking spray in large pot on medium heat for five minutes. Add broth, celery, carrots, and cabbage. Simmer ten minutes. Add zucchini and squash, cook about 5 to 10 more minutes, depending on how soft you like your veggies.
