"Meat & Potatoes"

1/2 Onion, chopped1 clove of garlic, minced or pressed4-6 large red potatoes, unpeeled and diced1 small green bell pepper, diced1/2 lb soy or vegetable meat substitute1 tsp chili powder1 bay leaf1 tsp grapeseed oilsalt and pepper
1. Saute onions and garlic until the onion becomes translucent
2. Add the meat substitute and brouwn for 5 minutes or until desired
3. Add bell bepper and potatoes, plus all the spices
4. Don't forget to season with salt and pepper
5. Cook for about 30 minutes, stirring occasionally. You can add a little vegetable stock if it gets to dry
Serve this dish with a salad and side of beans or use it as a filling for tacos or a burrito
