Black Bean Soup!

Ingredients
Red Onion smallOne large garlic cloveOne can of amys kitchen organic black bean soup (for a base)one can of organic black beans1/2 cup of dried couscous ( i prefer pearled) makes one cup cooked.Sea salt and cracked pepper to taste.
Directions
Peel garlic clove and onion. Place into your vitamixer, or food processor. Chop on level 3.

Once that is diced, add can of rinsed black beans. Mix that together until smooth.

Boil Water on stove. Cook couscous per instructions.
Once the couscous is ready, add black bean soup by amy to same pot.
Add in your black bean mixture from the blender.
Stir occasionally and heat through.

I added a tbs of almond milk to make it a bit more creamy that is optional. season to taste. great easy soup. the extra blackbeans, onion and garlic kick up the nutrition and the taste!
