Omelet "Muffins"

Ingredients
16 oz Non fat cottage cheese6 large Egglands Best Eggs4 egg whites1/4 cup lowfat buttermilk1/4 cup wheat flour1 tsp baking powder1/4 tsp salt1.5 cups shredded Colby Jack cheese4 T bacon bits1/2 cup salsa3/4 cup steamed broccoli (finely chopped)
Directions
1. Preheat oven to 350 degrees F, spray muffin tin with fat free cooking spray.

2. Mix first 7 ingredients in a blender until smooth.

3. Stir in shredded cheese, bacon bits, salsa, and broccoli pieces.

4. Pour (3/4 full) into muffin tin and bake for 12-15 minutes (until lightly browned).

Makes 12 medium sized muffins.
