1 fresh egg1 serving Hormel Sliced Turkey Pepperoni, chopped3 Tbsp Onion, chopped and lightly sauteed3 Tbsp Green Pepper, chopped and lightly sauteed2 oz Shredded low-fat mozzarella cheese2 Tbsp Marinara or Spaghetti sauceSalt and pepper to taste
Lightly spray a non-stick skillet with Pam spray. Break the egg and stir. Pour into pan and cook until it can be turned. Turn and immediately add the chopped pepperoni, sauteed onion and green pepper, sauce and cheese onto half the egg. Fold egg over, remove pan from heat, cover and let set for just a minute to melt the cheese and heat the sauce. Slide onto a plate, garnish with a little fruit and enjoy.
