Chocolate Cupcakes

Ingredients
1/2 Cup Light Butter, Softened1 Cup Stevia1/4 Cup Egg Substitute1 tsp Vanilla1/2 Cup Cocoa1 tsp Baking Soda1/4 tsp Salt1/2 Cup Water1/2 Cup lowfat buttermilk1/2 Cup Applesauce, unsweetened
Directions
In a small bowl, cream butter and stevia until light and fluffy. Beat in egg sub. and vanilla. Combine the flour, cocoa, baking soda and salt: gradually add to creamed mix. alt. with water and buttermilk, beating well after each addition.

Fill muffin cups 2/3 full. Bake at 375 for 12-15 min. makes 15 cupcakes.
