MaryJane's After the Holidays Turkey Eggrolls

1 medium head of cabbage1 or 2 medium carrots2 cups bean sprouts2 cups diced or shredded turkey6 Tbs lite soy sauce2 pkgs egg roll wrappersVegetable oil
Shred cabbage and carrots. Dice up turkey and sprouts. Combine into a large bowl and add soy sauce. Fill each egg roll wrapper with a tight palm-full of the mixture and roll, making sure to seal all edges with a drop of two of water. Be careful not to tear the skins or too much oil will get in. Fry in preheated oil until golden brown. Drain well. Serve hot and enjoy!
