Ingredients
2C. summer squash, chopped in chunks1/2 c. mushroom slices3 cloves garlic , pressed1 tbsp. olive oil2 large eggs1/4 c. parmesan cheeseMrs. Dash garlic and herb seasoning blend1 c. chopped onions1/2 cup sundried tomatoes
Directions
In pan add oil and sautee, squash,mushrooms,onion, garlic, till tender. Add sundried tomatoes last few minutes of cooking. Poach eggs. Divide vegtables between 2 plates. Sprinkle with cheese. Put poached egg over each plate of sauteed vegetables. Enjoy
