Egg Plant bites

1 eggplant, sliced 1 cm thick2 egg whites1.5 tablespoons water1/3 c kellogs corn flake crumbs2 tsp kraft parmesan cheese1/4 tsp salt1/4 tsp pepper2 tsp italianne seasoning
1. Preheat oven to 400 degrees.
2. Line a baking sheet and brush the two tbsp of olive oil over the bottom.
3. In one bowl mix water and egg whites, in another the corn flake crumbs, parmesan cheese, salt, pepper and italianne seasoning.
4. Dip the egg plant slices in the egg white mixture and then coat in the crumb mixture.
5. Place on baking sheet and into the oven. Bake 10-15 minutes on one side and then flip over to finish.
