Ingredients
flourbaking powderbaking sodasaltmashed ripe bananaslemon juiceshorteningsugareggsmilkcinnamonallspice
Directions
sift together flour, baking powder, salt and baking soda. mash bananas and add lemon juice. Cream shortening and sugar. Add eggs and beat thoroughly. Add sifted dry ingredients alternately with the milk. Fold in bananas. Pour into greased 8.5x4.5x2.5 loaf pans.
makes 2 loaves
Bake in 350* oven for 1 hour until cake tester comes out clean. ( my experience is it can take up to 1.5 hours) cool 10 min. cool overnight before serving.
