Lemon squares

Ingredients
1/2 cup butter softened1 1/3 cup flour1/2 cup powdered sugar1/2 tsp dried lemon peel3 eggs3/4 cup sugar3 tbs flour1/4 teaspoon baking powder1/3 cup lemon juice (juice of two med-large lemons)zest from two lemons (about 1 tsp)
Directions
Preheat over to 350. Mix together first 4 ingredients and press into square 9x9 Pyrex baking dish. Bake for 15 minutes (do not brown) remove from over to cool.
Roll lemons on counter applying slight pressure to (squish) the lemon pulp inside... you will get more juice this way.
Grate zest from lemons then cut in half and squeeze into measuring cup.
In a separate bowl beat eggs and add remaining ingredients including strained lemon juice. Mix til smooth and spread over top of cooled crust. Return to oven to bake about 20 minutes or until set. Dust the top with powdered sugar and cool on stove top for 1 hour before refrigerating. Chill well before cutting.
