mountain man breakfast casserole

Ingredients
1 lb sausage1/2 bag hashbrowns1/2 onion, chopped1 bell bell pepper, chopped6 eggs1/2 lb shredded cheese
Directions
Brown sausage. Remove sausage from pan. In covered casserole dish, put hashbrowns, onions, and bell peppers. Cook browned. Add back sausage - stir. Scramble eggs and mix in 1/2 of cheese. Pour scrambled eggs and cheese over hashbrown mix. Sprinkle the rest of the cheese over the top. Cover. Bake at 350 for about an hour.

Makes 10 1 cup servings.
