Hoppin' John

Ingredients
1 Tbsp Olive Oil1 medium onion, diced1 Red bell pepper, diced2 garlic cloves, minced2 150oz cans black-eyed peas, rinsed and drained1/4 cup vegetable broth or water1 tsp salt1/2 black pepper2 green onions, thinly sliced1/4 cup flat-leaf parsleyCooked rice
Directions
Heat Olive oil, add onions, red pepper and garlic-Saute.
Stir in Black-eye peas, broth,salt and pepper. reduce heat to low ; cook for 10 minutes. Stir in green onion and parsley.
Serve on top of cooked rice and garnish with cheese.
