Lighter Banana Bread

3 bananas, mashed (about 1 1/2 cup)2/3 cup sugar1/3 cup Splenda2 eggs separated1 cup all purpose flour1 cup whole wheat flour (King Arthur White Whole wheat is best)1 tsp baking powder1/2 tsp salt
Preheat oven to 350 F.
In a large bowl mash the bananas with the sugar and sucralose well. Add the two egg yolks and mix. Set aside.
Sift together the flours, baking powder, and the salt. Gradually add the flour mixture to the bananas.
In another bowl, beat the egg whites until they form stiff white peaks.
Mix a small portion of the egg white into the banana batter to lighten it a bit. Gently fold the remaining egg whites into the batter, until no streaks of white can be seen.
Pour or scoop into a 9" x 5" loaf pan, greased or sprayed with non stick spray. Bake for 50 minutes, or until a cake tester comes out clean.
