Big Family Cheezy Chicken Mac and Cheese

8 oz chicken breast, thawed and cubed12 oz Barilla Elbow Macaroni2 c peas, frozen.5 c skim milk8 oz Velveeta with 2% milk (1/2 the fat)
1) Boil 4 quarts of water in a pot and cube thawed chicken into about 1/2 inch pieces.
2) When water is boiling, add the elbow macaroni and cook for 8 minutes on high heat.
3) Lightly spray a skillet with no-fat non stick spray (or olive oil spray) and cook the chicken over medium heat until lightly brown (meat centers should reach 165 degrees and be completely white).
4) Drain the macaroni and return to pan. Add the chicken, peas, milk, and cheese. Stir until the cheese is thoroughly melted and all ingredients are mixed completely and evenly.
Makes 12 one-cup servings.
