Zoinks! Chicken Tortilla Soup

Ingredients
1.5 Lbs Skinless Chicken Breast1 Can Bush's Best Black Beans, Drained1 Can Yellow Sweet Corn drained2 cans diced tomatoes (14.5 oz)2 cans Tomato Sauce (8 oz)4 cans Chicken Broth (low sodium preferred)2 tsp Olive Oil4 minced cloves of garlic1 Medium Onion Chopped (red, yellow or white-your choice)1 Jalapeno Pepper, seeded & Chopped (size to taste)1 cup chopped Green Pepper2 tsp Ground Cumin1 tsp Chili PowderOptional: Cheese-Tortilla Chips (not listed in nutrition label).
Directions
*Makes 8 2 cup Servings

1) Boil Chicken Breast in a small pot, about 15 minutes. Remove and let cool, then shred using fingers or forks. Could also dice.

2) While Chicken is boiling, chop Onion, Jalapeno, Green Pepper, garlic, and set aside.

3) In a large pot, add Olive oil to bottom, then add veggies from step 2. Saute until soft.

4) Add spices, Shredded Chicken, Chicken Broth, Corn, Black Beans, Diced Tomatoes, Tomato Sauce, bring to boil and then simmer 60 minutes.

***Optional: Add some cheese and tortilla chips to top it off. Watch out for the calories you are adding though.

    very similar to a soup I do as well, but I will tell you one BIG difference that I Think you will like!
    I always blend about 1/4-1/3 of the soup up with an immersion blender (you can use a regular blender if you dont have an immersion).

    I make it exactly how you said except that I use two normal sized cans of tomato sauce (14 oz). It was an accident because I assumed thats the size that was called for. I love it, and I'll keep using the 14 oz. It gives it a great taste. Frequently, my entire family asks for this tortilla soup! - 6/24/13

    Considering how much it makes the one pepper does nothing for making it too spicy. In fact my wife and In-Laws are all non-spicey and cannot get enough of the soup.

    This soup was scrumptious. Put a tad of low fat cheese on top and crumbled 2 tostada chips and it was so good. The seasonings are perfect as well, nothing was overdone. Thank you for sharing such an easy to make, satisfying meal. - 4/23/09

    I don't see an option for editing this so I have to leave a comment here. During step 4 is when the spices are added as well. I also used some of the ingredients listed here. I think one of those must have been high in sodium as it can certainly be made with lower sodium than listed.
