Introduction

Great for cold nights! This "stew" will warm you up from the inside out! Great for cold nights! This "stew" will warm you up from the inside out!
Number of Servings: 6

Ingredients

    1 large carton chicken broth (aprox 4 cups)
    3 boneless, skinless chicken breast halves cut up into bite size pieces.
    1/2 large onion, chopped
    3 carrots, chopped
    2 small/med zucchini chopped
    1 cup frozen corn (Trader Joes fire roasted if you can find it)
    1/2 tsp ground cumin
    2 cloves garlic, minced
    1 8oz can tomato sauce
    2 16 oz cans diced tomatoes, undrained
    1 4 oz can diced green chilies
    2 tbsp dried parsley
    1 tsp dried oregano
    6 oz tortilla chips, divided
    1 tbsp canola oil


Directions

Saute onion, garlic and cumin in oil until soft. Add in chicken and broth to pan and bring to a boil. Let chicken simmer until cooked through, about 15 minutes. Add in cans of sauce and diced tomato, green chilies, zucchini, carrots, corn, chili powder, parsley, and oregano.
Let simmer about 45 minutes or until veggies are tender and flavors have developed.
Divide chips into 6 bowls and ladle soup over chips.
Add cheese or sour cream for garnish (not counted in Nutritional info)
