Sloppy Lentil Joes

Ingredients
3 1/3 c water1 large onion, chopped (1c)1 bell pepper, any color, 1c1T chili powder1 1/2c dry lentils, red or brown1 15 oz can diced or crushed tomatoes1T tamari2T dijon mustard1T rice vinegar1t vegetarian Worcestershire sauce
Directions
Place 1/3c water in a large pot. Add onions & bell pepper and cook about 5 min, until onions soften slightly.

Add chili powder and mix well

Add remaining ingredients , mix well, bring to a boil. Lower heat, cover and cook over low heat for 55 minutes, stirring occasionally.

Makes 6 one cup servings.
