Veggie,Turkey Sausage, Scrambled Eggs

Ingredients
2 cups Frozen Broccoli1 cup Frozen Chopped Onions8 oz pkg Sliced Baby Portabella Mushrooms4 Fit & Active Brown & Serve Turkey Sausage Links6 Egg Whites3 Large Eggs1/4 cup Sargento Reduced Fat Shredded Sharp Cheddar Cheese
Directions
Spray large non-stick skillet with non-stick cooking spray & put over medium heat. Saute mushrooms. Pour broccoli & onions into microwave safe bowl & heat for 2 minutes (just enough to defrost), drain any liquid. Heat turkey sausage links in microwave for 25 seconds & slice into small pieces.

When mushrooms are cooked, push to side of skillet. Add broccoli & onion mixture. Heat through, adding chopped sausage links halfway through.

Meanwhile beat together eggs & egg whites. When veggie sausage mixture is heated through stir together with mushrooms. Pour egg mixture over all. Allow to cook, lifting edges to allow uncooked egg to drain underneath. When unable to drain any more uncooked egg, flip mixture in portions with large spatula.

When all egg is cooked, remove from heat & sprinkle cheese over all. Cover with lid until cheese is melted. Makes 3 - 4 servings. I "eyeballed" what I thought was a third of the mixture for each serving.
