Beef and Vegetable Stir Fry

1 1/2 lbs ground sirloin1 medium white onion, diced1 T olive oil 2 14.5 oz. cans French cut green beans (drained)12 oz. sliced mushrooms (canned or jarred, drained)1 14.5 oz. can of Stewed Tomatoes (drained)Salt and Pepper to taste
Brown ground in a medium pan until it reaches an internal temperature of 160°F on a meat thermometer. Drain fat and set meat aside. In the same pan, brown onion for about three minutes in olive oil. Add drained vegetables to onion and heat for about 2 minutes. Add ground beef to vegetable mixture and reheat meat for about 2 minutes. Move all ingredients to a serving dish, salt and pepper to taste and serve 1/2 cup of beef mixture with 1/2 cup of brown rice.
