Grierson Creamy Risotto

onions, mushrooms, olive oil, garlic, bacon, pancetta, carnaroli rice, parmesan cheese, cheddar cheese,
chop and fry 8 slices of bacon. chop and add garlic and onion, along with olive oil. chop and add mushrooms, saute 5 minutes. Make 1500 mL of chicken stock with 1500 mL water and 6 tsp bouillon powder. Stir into veggies and bacon along with rice. Simmer 20 minutes, add grated cheeses. Stir, rest 5 minutes. Meanwhile grill pancetta slices. Top with pancetta, serve.
