Baked Onion Rings

Ingredients
nonstick cooking spray1 cup egg substitute1⁄2 cup plain bread crumbs11⁄2 cups cornflakes, finely crushed11⁄2 tsp. garlic powder1⁄2 tsp. cayenne peppersea salt to taste3 medium sweet onions, peeled3 Tbsp. Big Y all-purpose flour
Directions
Instructions:

Preheat oven to 375°F.
Spray a baking sheet slightly with cooking spray and set aside.
In a shallow bowl, add egg substitute. In another shallow bowl, combine bread crumbs, cornflakes, garlic powder, cayenne pepper and sea salt.
Slice onions into 1⁄2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should have about 24 rings. Place flour in a large resealable plastic bag. Add onion rings, a few at a time, seal and shake to coat. Dip floured rings, 1 at a time, into the egg substitute, letting excess drip off. Then dip each ring into bread crumb mixture, coating the ring completely; place on the baking sheet. Repeat with remaining rings. Lightly coat rings with cooking spray and bake for 20 to 22 minutes or until coating is crisp.
